Did you know June is National Fresh Fruit & Vegetables Month? Well, it is, and June 17th is National Eat Your Veggies Day!
Over the years, I've learned so many new ways to cook veggies. You can steam them, roast them, eat them raw, blend them into smoothies - the possibilities are endless and all are delicious.
So to celebrate National Eat Your Veggies Day, I'm sharing some of my favorite ways to eat more veggies with a bunch of allergy-friendly veggie-filled recipes. Lettuce dive in! (a little veggie humor for ya!)
This simple recipe is a great way to squeeze some veggies into your breakfast. They're great to grab-and-go if you're running out the door or give your kids on their way to school. Broccoli is one of my favorite veggies to add into eggs, but peppers and mushrooms are also great options.
This smoothie is a great option for the kiddos. They'll love the color, the sweetness and the creaminess, and you'll love that it's filled with avocado, spinach, healthy fats and protein.
Carrots, zucchini and chickpeas make up this healthy dish. They're great to have on top of a salad (plus, more veggies), along side some eggs for breakfast or as a side dish to your dinner.
I'm a huge fan of big salads, and this BBQ Chicken version is one of my favorites. It's a great option for your summer barbecues or to bring to work with you.
This veggie-filled bowl of yum is a great dinner option. The roasted veggies have so much flavor to make your taste-buds happy and fiber to make your gut happy. The leftovers reheat well, so it also makes a go ahead and pack it for lunch the next day, too!
You can't go wrong with a plant power bowl. One of my favorite combos is what you see below: zoodles with roasted sweet potatoes, roasted beets, sliced avocado and hard boiled egg, but the options are endless. This is a true veggie-packed dish that is sure to leave you feeling healthy.
No fryer? No problem! These sweet potato fries aren't actually fried at all. Rather than being covered in a ton of oil, they're are baked to perfection. They make a great side dish or healthy snack, and are sure to make the kiddos happy, too!
