A few weeks ago, Will and I hosted a 4th of July BBQ. We made a scrumptious red, white and blue charcuterie board, grilled pork, currywurst, bacon mashed potatoes, asparagus, and a delicious red, white and blue berry pie. Of course, we needed a red, white and blue cocktail to pair with our feast, so we gave this Red, White and Blue Vodka Lemonade Slush a try.
The cocktail was quite tasty, but it left me with a lot of leftover lemonade. While Will and I could have just enjoyed the lemonade as it was, it gave me an idea for a recipe.
You see, every summer I look forward to fresh watermelon hitting the grocery stores. I buy a bunch and freeze the watermelon for smoothies. You haven't had a refreshing summer smoothie until you've had one with frozen watermelon in it.
So, back to the lemonade. When I found myself with leftover lemonade and a freezer full of watermelon, I thought, "Lemonade is refreshing. Watermelon is refreshing. I have a lot of lemonade. I have a lot of watermelon. Oh look, I also have a little fresh mint leftover from that pork marinade. Let's do something about this."
That, my friends, is how this Watermelon Mint Lemonade was born.
Watermelon Mint Lemonade
I simplified things a bit by using pre-made lemonade, but you can easily make this fresh as can be by mixing fresh squeezed lemon juice with some water and sugar or honey.
Just add the lemonade to a high speed blender with frozen watermelon chunks (you can use fresh, too, but I liked the slightly thicker consistency of the frozen watermelon) and a few mint leaves. Blend it all up, pour it into a glass (strain it if you'd like) and enjoy the most refreshing beverage you've ever had.
And if it happens to be happy hour, this Watermelon Mint Lemonade makes for the perfect summer cocktail. Just add 1.5-2 ounces of vodka or gin and your lemonade will instantly be in adulting mode.
There's one more thing you need to take this recipe to the next level. It's a secret ingredient of sorts, but it's fairly easy to come by.
A hot summer day.
I don't mean an oh-it's-a-touch-warm-out-today day. I mean a hot-damn-I-feel-like-my-face-is-melting hot day. A scorcher of a day makes this Watermelon Mint Lemonade all the more refreshing. Add in humidity levels of 80% or more and it'll be the best damn thing you ever tasted in your life (especially if you adulted it that vodka or gin)!
