Paleo Chicken Salad

Ingredients
- 1 large chicken breast (diced)
- 1 medium celery stock (diced)
- 1/4 cup almonds (sliced)
- 1/4 cup dried cranberries
- 1/2 cup Primal Primos Mayonaise (substitute Greek Yogurt)
- Salt & Pepper (to taste)
- 1 large avocado
- 1 head romaine lettuce
Optional
- Sriracha hot sauce (to taste)
Directions
Step 1 Combine chicken, celery, almonds, dried cranberries and mayonaise in a bowl, mixing until well incorporated.
Step 2 Use each leaf from your lettuce head as a cup, placing sliced avocado in it and then topping with your chicken salad.
