Healthy Banana Waffles

Before I get to this recipe – weekend photos!

On Friday night after dinner the family walked down to a popular ice cream spot – which locals call “A hole in the wall” The vestibule of this place is big enough for 2 people, you walk in, and everyone else waits outside for their turn to go in.

It was such a nice night outside!

Saturday was running errands, then my husband and I hit the YMCA – I’ve been doing the elliptical and now I am adding weights. I was inspired by Janette who I just interviewed – she said if you are going to work out – make it count. I’ve been doing 40 minutes at level 10 out of 25 – I thought that was a good workout. But then I thought – what if I tried to do level 25? If it was too hard, I could always lower the level. But guess what? I did the whole time – 45 minutes at level 25 and I burned way more calories going slower because the resistance was so much higher, than doing it speedy! I did 2 circuits of weight training too!

Saturday night a local pool near us was closed for a private party that we were invited to. It was still in the 80′s at 8 p.m. when it started – so much fun – they had free food too!

Then Sunday was grocery shopping, yard work then date night! I wish my husband and I went out more just with us – after being together 20 years and 3 kids later – we need a night to ourselves once in a while!

We went to a restaurant called Piggy Back Tavern – it was delish!!

I ate the whole thing it was that good! Great food – great drinks – great atmosphere – we will definitely go back.

In other news – what do you think about the Paula Deen controversy? I think if you are someone in the public eye, now matter how you grew up, what was said in your home, it doesn’t excuse using that kind of language to talk about other people – she should know better than that! I’ve read a few more sponsors in addition to Food Network have dropped her.
