Double Berry Baked Oatmeal

During the week I feel too crunched for time to really spend a lot of effort on breakfast. It is usually something healthy and quick like yogurt with granola, a juice or smoothie but sometimes I went a big hearty warm breakfast. Specifically oatmeal. Breakfast comfort food.

Today also happens to be National Oatmeal Day. I feel like this is something to celebrate. I love oatmeal but definitely don’t make it enough. To help remedy that situation I decided to make a baked oatmeal. I made it Sunday afternoon and had a serving then (nothing like a little oatmeal and football) and plan on eating this for breakfasts for a few days this week.

What makes this oatmeal that much better is berries. Fresh berries that remind me of summer and give me hope that the next few months of cold and snow will go quickly. A girl can hope. Driscoll’s sent me coupons for a few containers of berries. I picked up strawberries, blackberries and raspberries.

I gave Scott the option for the Double Berry Baked Oatmeal and he opted for the strawberry/blackberry combo. A good choice. The rest of these delicious sweet berries will be snacked on throughout the week.

Double Berry Baked Oatmeal

Double Berry Baked Oatmeal

Ingredients (Serves 4-6)

  • 2 cups old fashioned oats
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups milk
  • 1 egg
  • 3 tbsp butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 7-8 large strawberries, sliced
  • 3 ounces blackberries

Instructions

Preheat oven to 375

In a large bowl mix together oats, sugar, baking powder, nutmeg, cinnamon and salt. Pour half the mixture in 11×7 baking dish that has been sprayed with olive oil or non stick cooking spray.

Top first layer with sliced strawberries. Pour remaining dry oat mixture over the berries. Top with blackberries.

In a small bowl whisk together the egg, milk, melted butter and vanilla.

Pour the egg and milk mixture over the oats and berries. Make sure the mixture is evenly distributed.

Bake for 40 minutes at 375.

Top with a few more berries for garnish.
