Cooking for a Caveman

I have a confession. I’m in love with a caveman. Yup, one day I was watching television and that Geico commercial came on. I saw him and we fell in love.

JUST KIDDING! Those of you that follow The Boyfriend Chronicles know that Will has gone Paleo, and so I’ve taken to calling him The Caveman (not really, but let’s pretend for this post)

When he announced his Paleo intentions, he was nervous. He was concerned he wouldn’t be able to stick to a diet where all he could eat was meat and veggies and a little fruit. He was worried he was going to get bored.

 

Bored with Eggs

BORED? Fool, you’re talking to the queen of dietary restrictions! I’d never let you get bored. And so, the Cooking for a Caveman Challenge commenced. 

You see, since discovering that I pretty much can’t eat anything on the planet (ok, that a drastic overstatement, but I stay away from wheat, soy, peanuts, and lactose due to allergies), I’ve become somewhat of a pro in finding healthy alternatives and coming up with creative solutions to my wheat, soy, peanut, and lactose-filled favorites.

So I took to Pinterest, scoured the web, and did some creative concocting in my head. Before he could complain that he couldn’t have one more egg for breakfast, I was whipping up Paleo pancakes (recipe to come)

Before he could say he wanted something sweet, I was pulling Paleo Pumpkin Cookies out of the oven. 

I also had to find dinners we could both enjoy, because you best believe I wasn’t going to go back to the days of making one meal for me and a whole other one for him. Ain’t nobody got time for that. Luckily, I’ve come up with plenty of Fitful Focus friendly options like chili, chicken, and chorizo burgers, and you know what I discovered (besides that we like foods that start with c)? My dietary restrictions have prepared me well for Paleo. As a matter of fact, I’m practically a Paleo Pro. The only non-Paleo things I eat are Quest Bars, my beloved oatmeal, and rice (though some Paleo eaters will have both oatmeal and rice in moderation). Oh, and gummy bears… I do eat lots of gummy bears… it’s kind of a problem…

You know what else I discovered? I like dating a caveman! Is it ’cause he’s hairy? Pshhh, no! (maybe… what?!) It’s because I’m not the only one with dietary restrictions anymore! I am not alone in being a pain the @#$ at restaurants, asking every waiter if something is gluten and dairy free. 

Will now has an interest in all my “weird” foods like coconut flour and using chia seeds to make things fluffy. I think I’ve finally convinced him that gluten free can be just as tasty as gluten-filled and that almond milk is just as good (if not better) than regular milk.

But you know the best part of Will going Paleo? Every weekend he cooks up some bacon for breakfast. I’m pretty sure there isn’t anything better than waking up to the smell of bacon. If heaven is for real, every morning is a bacon morning. Maybe that means the angels are Paleo… Hitherto, I’m dating an angel. (aweeeeeee…)
