Yogurt Marinated Chicken

My friend Bobby came over for dinner to check out our new place, have a few beers, enjoy a good dinner and dig through our travel items for his trip to Ireland. He left full, covered in dog hair from Clifford and Tanner and most importantly equipped with a few space saving items for his trip. It was a pretty good night for all of us.

Since he lives alone he does some cooking, but usually not at an elaborate level involving lots of ingredients. We had this yogurt marinated chicken that was incredibly moist and had just enough garlic flavor, bean salad, a little watermelon salad and a few new to us beers.

While this chicken does take a bit of time and planning for the marinade, it is so worth it. Perfectly grilled and full of flavor, there was none leftover.

Prep Time: 5 Minutes plus marinating time

Cook Time: 15 Minutes

Ingredients (Serves 2)

  • 1 lb chicken breasts (this was 2 large chicken breasts for me)
  • 1 cup plain Greek Yogurt
  • 4 cloves garlic, finely minced
  • Salt/Pepper

Instructions

In a large resealable plastic bag add yogurt, garlic, salt/pepper and chicken and marinate at least 8-10 hours or up to 1 day in the fridge. (I put this in right before going to bed and grilled it the next night).

Preheat the grill. Take chicken out of the fridge and let it sit out for a few minutes.

Grill chicken 5-10 minutes per side, or until cooked through.
