I love weekends – sleeping in – lounging in pajamas – drinking coffee and I have no problem getting up and a few minutes later – getting busy in my kitchen. These breakfast egg rolls are great – you can literally change it up with whatever veggies you have left over for the week, I used 2 eggs, but you could even make it lower in Smart Points by using egg whites.
My original recipe I used olive oil to cook them in a small skillet – this time I used Pam cooking spray.

My husband and I walked around this afternoon getting stuff for Easter Baskets – so we walked about 3 miles I would say. We were on the fence going to our local high school track – I wasn’t feeling like running but I thought I could walk more – so we changed into our work out clothes and headed over.
We had the track to ourselves almost the whole time! I walked another 2.5 miles – and just doing other chores around the house I’m at 19k steps today! Whoop!


Since I work up late – I didn’t have lunch – I knew I wanted to make something with Chicken for dinner – I call this my skinny crunchy chicken. I have a grill pan from Williams Sonoma for the stove, so I cook it on there – it turns out great every time.
Crispy Skinny Chicken light and crispy - great for a quick dinner.Servings

- 2 chicken breastsboneless and skinless
- 1cup panko bread crumbs
- 1tsp black pepper
- 1tsp. paprika
- 1tsp garlic salt
- 1cup skim milk
- Take 2 chicken breasts - mine were HUGE - so I cut them horizontally to make skinny cutlets. It makes cooking them so much easier since they are all even in size. (photo courtesy of www.afoodcentriclife.com
- Sprinkle chicken with salt and pepper. In a medium bowl, add 1 cup skim milk and add the cut chicken. (this helps keep the coating on).
- In a gallon Ziploc bag - add 1 cup Panko bread crumbs with black pepper, paprika and garlic salt.
- Remove chicken from skim milk and place one piece of chicken at a time into the Ziploc bag and shake to coat. Do this with all the pieces - add more panko if needed.
- Using a grill pan - coat it with cooking spray and add enough chicken to fill the pan. Use low - medium heat and cook each side for 4 minutes. I had to do two batches, so the first batch I kept warm in my oven at 250 degrees.
To figure out the points - I weighed 6 oz. of chicken which is 4 Smart Points and added 2 more Smart Points for the coating. This turned out so great!
With dinner I made a quick orzo spinach feta salad - you can definitely make this ahead of time and chill in the fridge.
2 cups cooked orzo
3 cups torn fresh spinach
1 tsp. olive oil
1 tsp. black pepper
juice of 1/2 lemon
zest of 1 lemon
4 oz. feta cheese, crumbled
In a large bowl add all the ingredients, stir to combine. I didn't add salt since the feta is kind of salty - so taste it and season it to your own taste. Store in the fridge until ready to eat.
