I love the flavors of tacos and burritos but tend to make a big mess, enter the big bowl where you can mix together all that deliciousness. Easier to eat and customizable to what you like. My bowl was quinoa, turkey sausage, black beans with onions, tomatoes, a bit of cheese and topped with salsa. Scott had the same with about a half a bottle of hot sauce added to it.
It felt like the perfect comfort food. Hearty and full of flavor. We had this on an unseasonably cool day last week and it exactly what I needed.
Turkey Quinoa Bowls

- 1 cup quinoa
- 1/4 tsp tumeric
- 2 cans black beans, drained and rinsed
- 3 links sweet turkey sausage, casing removed
- 1 bell pepper, finely chopped (or a handful of small ones like I used)
- 1 jalapeno, de-seeded and minced
- 2 garlic cloves, minced
- 1 cup chopped tomatoes
- 1 tsp cumin
- Chopped cilantro for garnish
- Salsa for topping
Instructions
Cook quinoa according to directions, adding 1/4 tsp of tumeric to the water.
In a large non stick skillet cook turkey sausage until browned, add in peppers, jalapeno, garlic and cumin. Cook until veggies are cooked through.
Add in drained and rinsed black beans and tomatoes. Stir to combine. Cook until heated through.
Place quinoa at the bottom of the bowls and top with the turkey and bean mixture. Add cilantro and salsa and serve.
