I’m not a huge fan of corn tortillas just warmed up – but when they are fried and crispy – LOVE that!
This is a quick and easy breakfast. I made it at home, put it in a container lined with a paper towel and just stuck it in the toaster oven at my office.

Ingredients
- 3 corn tortillas
- 3 oz. leftover taco meat
- 1 egg
- cilantro
- chopped peppers and onions
- sprinkle of cheddar cheese
Instructions
- In a small skillet, cook 1 egg - either fried or scrambled (chop it up) and set aside.
- In the same skillet - add however much peppers and onions you want and cook that for a few minutes, set aside.
- Heat the taco meat in the microwave.
- To assemble. Take 1 tortilla, 1 oz. of taco meat, peppers and onions, some of the egg, a little cheese and cilantro.
- Heat the skillet again and spray the outside of the tortilla with Pam cooking Spray.
- Cook for 2 minutes on each side. Repeat with other tacos.
This was so good!! Corn tortillas are half the calories of flour tortillas and they have more fiber – so for 3 tortillas it’s only 150 calories.
This took no time at all to put together. And of course if you don’t want to add meat – you could add another egg if you wanted.
