Muffins are one of my all time favorite breakfasts. Before I started this blog and switching to a more healthy eating plan, there was a bakery on my way to work that made THE BEST lemon poppyseed muffins. If I was driving to work and there was a parking space right out front, I would stop to get a muffin, if there wasn’t a parking space – I would continue on. (not the best strategy!) I’m guessing the muffin was at least 600-700 calories – it was gigantic – and it got me thinking – maybe I could make ones that were just as good, but won’t be such a bad way to start the day! Most of the regular sized muffins I’m about to post are less than 200 calories, and the jumbo muffins are less than 300 calories. One thing about my muffins? They almost always include chocolate chips!
These are my banana chocolate chip muffins – 186 calories per muffin!
Zucchini banana muffins with sugar oat topping – 190 calories per muffin
Double chocolate chip muffins – 213 calories per muffin
Jumbo carrot cake muffins – 321 calories – made in a 6 count jumbo muffin tin like this one:
Microwave muffin for 1! 217 calories per muffin, less than 3 minutes start to finish! They don’t look pretty – but it works!
Jumbo Cinnamon Muffins - 284 calories
Lemon Poppyseed muffins – 184 calories per muffin.
This is a great savory muffin – turkey bacon corn meal and cheese!
Another one of my all time favorites – chocolate zucchini muffins 217 calories per JUMBO muffin. I adapted this from Heidi at 101 cookbooks to make them less in calories.
Banana Butterscotch Toffee JUMBO muffins – 277 calories – so good!
