The Better Chip Chipotle Steak Chili

Our 2nd Annual Chili Cook-Off was last week at work. I didn’t win best overall but I did get Most Unique Ingredient. I’ll take it! The challenge about living in MN and having a chili cook-off? Very bland taste buds. And I am not saying that to be disrespectful. It’s seriously true. Most find ketchup too spicy (hello ancestors from Norway, Sweden and Germany). So I always try to push the envelope.

This year I went with a Chipotle Steak Chili with Better Chip’s new chipotle chip as a garnish. Hello great flavors. Bacon, ground sirloin, chipotle hot sauce, a bit of cheese and chips. Seriously delicious.

The Better Chip sent me a big box of their chips. And hello chips my all time favorite snack. Salty goodness! These just happen to be a bit better for you since they are made of real ingredients and taste amazing. And no GMO’s and Gluten Free.

My first task was to figure out how to incorporate their new chipotle flavor into a recipe. And chili won out. See that confidential sticker… super top secret. Until this week. Smoky bacon, chipotle chili powder and chipotle hot sauce. This is not your average chili. If you want it thicker reduce the amount of beef broth but I really enjoyed a different spin on chili.

The Better Chip Chipotle Steak Chili

Ingredients (Serves 4)

  • 1 tbsp olive oil
  • 6 slices thick cut bacon, chopped
  • 2 pounds ground sirloin
  • 1 large onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 8 tbsp chili powder
  • Salt and pepper
  • 2/3 cup Worcestershire sauce
  • 1/2 cup dark brown sugar
  • 4 tablespoons hot sauce, such as Tabasco Chipotle Sauce
  • 1 tbsp chipotle chili powder
  • One jar marinara sauce, 24 ounces
  • 3 cups beef stock
  • 2 cans fire roasted tomatoes, with their juices
  • 2 cans black beans, rinsed and drained
  • Sour Cream, Cheese, Green Onions and Chipotle Better Chips for Garnish

Instructions

In a Dutch oven, heat the olive oil over medium-high to high heat. Add the bacon and cook until the fat renders, about 5 minutes. Add the beef and cook, stirring, until browned, 8-10 minutes. Add the onion and cook until softened, about 5 minutes. Add the garlic, chili powder, chipotle chili powder and salt/pepper to taste

In a bowl, stir together the Worcestershire sauce, brown sugar, hot sauce and tomato sauce. Stir into the chili. Stir in the beef stock, tomatoes and beans and bring to boil, then lower the heat and cook until thickened, 15 minutes.
