Imagine a potluck where you are the youngest by about 30 years, except for a few families with kids. That was Scott and I at a neighborhood potluck. Since we are new to the area we wanted to meet a few people. While this idea was good in theory I didn’t think about who would probably be there.
We had fun, ate very traditional MN potluck food (fried chicken, jello with fruit and potato salad) and I thought I would expand the horizons of a few people and bring a spinach salad with lots of summer vegetables. Crazy!
It worked. Almost all of the salad was gone
Yeah neighbors eating your vegetables. Especially “weird” things like edamame.


Summer Salad

- 1 bag de-shelled edamame (around 14 ounces)
- 1 pint grape or cherry tomatoes, halved
- 2 cups green beans, cut into pieces
- 1 bag baby spinach
For the Dressing
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tsp agave nectar
- Salt/Pepper
