Summer Salad with Buttermilk Dressing

It just feels right to be eating a big bowl of green goodness on a hot day. Add in some grilled chicken and it’s even better. Homemade dressing to top it off! Perfect for a picnic or great as leftovers (just leave the dressing off and only add when you are ready to eat).

The stove? I feel like it gets neglected in summer. We grill so much! Everything from brats to chicken to corn to bacon, yes bacon. Just wrap the bacon in foil and throw it on the grill. Delicious and crispy! That is what we did for this salad.

I was in the kitchen chopping veggies and lettuce, Scott was tending to the grill and we had the dogs running back and forth between us to see where they could get a handout (It was me, I always give into those eyes and especially with veggies).

Ingredients (Serves 4)

  • 1 head of lettuce, torn (such as red leaf, boston, bibb)
  • 1 cup frozen corn
  • 1/2 head broccoli
  • 1 cup snow peas
  • 2 grilled chicken breast
  • 6 slices bacon, cooked crispy and crumbled
  • 1 green onion, chopped
  • 1/2 cup crumbled blue cheese

For the Dressing

  • 3/4 cup buttermilk
  • 1/4 cup Italian (flat-leaf) parsley
  • 3 tbsp mayo
  • Salt/Pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dry mustard
  • 1 clove garlic

Instructions

In a large bowl combine lettuce, corn, broccoli, snow peas, bacon, green onions, blue cheese and chicken.

For dressing, in a blender combine buttermilk, mayo, parsley, salt, onion powder, dry mustard, pepper, and garlic. Cover and blend until smooth. Pour over salad.
