Whenever we get together with friends/family I am the one that always brings something healthy. Usually a salad, fruit or veggies & wine. I think they have come to expect it & they usually know which one I brought.
This spinach orzo salad is one that I would bring. Fresh, packed full of flavor and get warm or cold. My kind of salad. Just prep it the night before and grab it when you are ready to go. Easy entertaining.


Spinach and Orzo Salad

Cook Time: 20 Minutes

6050171Ingredients (Serves 6-8)
- 8 ounces cooked orzo
- 4 ounces baby spinach
- 4 ounces feta
- 1 small red onion, finely diced
- 2 tbsp capers
For the Dressing
- 3 tbsp olive oil
- 2 cloves garlic, finely minced
- Juice and zest of 1 lemon
- Salt/Pepper
Instructions
Cook orzo according to to directions. Cool slightly.
In a large bowl add spinach, feta, red onion, capers, and orzo.
Whisk together olive oil, lemon juice, lemon zest, salt/pepper & garlic.
Pour over salad and serve or chill for a few hours.
