Spicy Chilled Zucchini Noodles

As soon as June hits I feel like my appetite dies down. I don’t know if its the busy evenings, warm temperatures or longer nights but we often don’t eat until almost 8pm and sometimes it’s just a salad. I’ve found making some great veggie sides makes dinner prep easier, especially when we are eating late.

 

I’ve been wanting a spirilizer for so long but  I noticed that there was some Pampered Chef products that would help, I bought the spiral and slice and the julienne peeler. Both give me vegetable “noodles” without needing another big kitchen appliance that I only use a few times a month.

I used the spiral and slice to make these noodles and let them soak up all the delicious dressing. This is cool, so easy to make and will last for a few days! You could use squash, cucumbers or zucchini like I did.

Ingredients (Serves 6-8)

  • 2 medium sized zucchini
  • 2 tbsp olive oil
  • 2 tsp rice wine vinegar
  • 2 tsp agave nectar
  • 1/8 tsp red pepper flakes
  • 1/2 tsp hot sauce
  • 1/2 tsp garlic powder
  • Salt/Pepper

Instructions

Using a spirilizer, mandoline, or julienne peeler make zucchini noodles and place into a large bowl.

In a small bowl whisk together olive oil, rice wine vinegar, red pepper flakes, agave, hot sauce, garlic powder, salt/pepper.

Chill for 2-3 hours.
