Since we had a non existent spring and it’s felt like it has been raining way too much we haven’t had enough time to grill! Even though it was drizzling one night Scott braved the drops and fired up the grill.
I had skirt steak on the menu and that is what I wanted! Seriously nothing better than a spice rubbed steak, add in a glass of wine and I am a happy girl. Not to mention that my country boy meat eating husband loves his steak.


Skirt Steak with Green Salsa

Ingredients (Serves 4)
- 1.5 lbs skirt steak
- 5 tsp chili powder
- 2 tsp cumin
- 2 tsp oregano
- 2 tsp olive oil
- Salt/Pepper
Spicy Green Salsa
- 3 tbsp olive oil
- 1 jalapeno, finely diced and seeds removed
- 1 tsp red wine vinegar
- 1/2 cup cilantro, chopped
- 1 tbsp water
Instructions
Combine the chili powder, cumin, oregano, salt/pepper in a small bowl.
Rub the spice mixture over the steak and drizzle with oil.
Grill 2-4 minutes per side depending on desired doneness. Serve with the salsa.
Spicy Green Salsa
Combine the cilantro, jalapenos, olive oil, red wine vinegar, salt and water in a bowl. To store, cover with plastic wrap.
