My go to snack the past week during our detox was spiced pumpkin seeds. I already love these raw in salads but with a little coconut oil and seasoning mix they were amazing. When I was craving something crunchy this is what I would reach for. You can make a big batch and store them in a sealed container and they will last at least a few days!
Pick your spice mix of choice but I went for Stubb’s Bar-B-Q spice rub since I am an ambassador with them and I have a cabinet full of their sauces and rubs. And let me just say this was delicious on the nuts. It gave it a nice kick!


Spiced Pumpkin Seeds

Prep Time: 5 minutes
Cook Time: 10-15 minutes

- 2 cups raw pumpkin seeds
- 2 tbsp coconut oil
- 2 tbsp spice mix, such as Stubb’s BBQ Spice Rub
Instructions
Preheat oven to 350.
Line a cookie sheet with a baking mat or parchment paper.
In a large bowl combine pumpkin seeds, coconut oil and seasoning.
Pour onto lines cookie sheet and bake for 10-15 minutes.
