A chili that comes together in about 40 minutes is perfect for a week night. Especially one where you throw a few ingredients in a pot and get great flavor. It’s the jalapeno and southwest spices that make this dish. No bland chili over here. What’s even better is that makes enough for a few meals. Having leftovers for lunch saves us so much time!
Scott of course added up 10 dashes of hot sauce to his but he did eat 2 heaping bowls of this quite quickly. I will take that as a ringing endorsement.
Southwestern Chicken Chili

- 1 onion, finely diced
- 1 jalapeno, finely diced
- 1 green bell pepper, finely diced
- 1 lb ground chicken
- 3 tbsp southwest seasoning
- 4 garlic cloves, finely diced
- Salt/Pepper
- 2 cans Great Northern beans, drained and rinsed
- 1 jar tomato sauce
- 1 can diced tomatoes
Instructions
In a large dutch oven brown chicken, onion, jalapeno, bell pepper, garlic and seasoning for 8-10 minutes.
Add beans, tomato sauce, tomatoes and salt/pepper. Simmer for 20-30 minutes, or until cooked through.
Serve immediately.
