Finding really good quality bone in pork chops can be pretty darn difficult but when I find them, and they just so happen to be on sale you can bet that I will be buying them. A nice thick, juicy pork chop.
These are not the pork chops from when you were a kid. They are not paper thin or coated in Shake’n’Bake. These are perfect, a bit of seasoning, roasted potatoes and apples and a really great dinner. A nice bottle of Malbec or Roija also goes really well with these, the spices play off of each other and your taste buds end up pretty darn happy. At least mine did!

Southwest Pork Chops with Potatoes and Apples
Prep Time: 10 minutes
Cook Time: 30 minutes

- 2 lbs bone-in pork chops
- 3 tbsp southwest rub
- Olive Oil
- Salt/Pepper
- 2 apples, cut into 1 inch pieces
- 3 large potatoes, cut into 1 inch pieces
Instructions
Preheat oven to 375.
Rub pork chops with spice rub on both sides and place in a large roasting pan
In a large bowl combine potatoes and apples, drizzle with olive oil and top with seasoning. Pour around the pork chops.
Roast for 20-40 minutes or until pork is cooked through and the potatoes and apples are tender.
