If I could eat smoked salmon a few times a week I think I would. However, it isn’t exactly cheap and it can be hard to find really good quality smoked salmon. I happened to be doing a Sam’s Club run and they had just received in fresh smoked salmon from Alaska. 2 packages quickly went in my cart!
One we enjoyed with some cheese, olives, nuts and wine and the other I was having a hard time figuring out what the heck to do with. While I was paging through cooking light I saw something that inspired me. Their version had wheat berries and no greens but I thought it was a fantastic idea.
Smoked Salmon Salad with Millet
Prep Time: 15 Minutes
Cook Time: 20-30 minutes

- 1 cup uncooked millet
- 3 cups baby kale
- 1 diced apple (such as Pink Lady, Honeycrisp or Granny Smith)
- 1/2 of 1 small finely diced red onion
- 4 ounces smoked salmon, cut into 1-inch pieces
- 2 medium celery stalks, thinly sliced
- 2 tablespoons extra-virgin olive oil
- Zest of half a lemon
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
Cook millet and set aside to cool
Combine millet, kale, apple, red onion, smoked salmon and celery in a large bowl.
Whisk together olive oil, lemon zest, lemon juice, mustard, salt/pepper. Pour over salad. Serve immediately or chill for a few hours.
