I love to read cookbooks. Sitting down with a glass of wine in front of the fire and slowly paging through and bookmarking the recipes I want to make is one of my favorite ways to relax. And as much as I love cookbooks it’s rare for me to mark more than a few recipes but with the new cookbook from Martina McBride I had at least 8 different things marked. It was crazy! I’ve already made 4 recipes and have another one planned for dinner this week. You might be thinking, really a country star writing a cookbook? She loves to entertain and you can tell! Great tips like prepping beforehand and a few key items to have on hand in case you need to get a few snacks out quickly (hint: cheese, nuts, olives, pickles, dried fruit, and crackers).
One of the favorite quick and easy things I’ve made so far are the Smoked Paprika Almonds. They are delicious and went over so well at a wine party. You can even amp up the flavor with a few red pepper flakes too. And the bonus of this recipe is that these will keep in an airtight container for at least a week (if they last that long). Just be sure to save some after you start eating them warm out of the oven. These are so addicting!

Ingredients
- 2 cups almonds
- 1 tbsp olive oil
- 2 tsp brown sugar
- 1 tsp smoked paprika
- 3/4 tsp salt
- 1/8 tsp red pepper flakes
Instructions
- Preheat oven to 350
- In a medium sized bowl mix the almonds, olive oil, brown sugar, smoked paprika, salt and red pepper flakes.
- Spread on a large baking sheet.
- Bake 15-20 minutes.
