Secret Recipe Club Pizza Bites

Everyone has that food that they could probably eat every day, pizza is that food for me. I love it. Thick crust, thin, coal fired and all sorts of toppings. The more the merrier. But I know it really isn’t all the healthy for me and it gets expensive! So instead of ordering pizza one night we made pizza bites.

Now just what are pizza bites? They are dip worth muffin style mini pizzas that you bake. It sounds like a ton of work but they are so easy! Thanks to Elizabeth of Food Ramblings for my Secret Recipe Club pick this month. I was browsing her list of recipes and came across pizza bites and knew I had to try them.

I happened to have all the ingredients at home and the prep time on these was less than 15 minutes. Pop them in the oven while you clean up the kitchen and you are sitting down to dinner in less than 45 minutes of prep and cooking time.

Secret Recipe Club Pizza Bites

Prep Time: 15 minutes

Cook Time: 20-25 minutes

Ingredients (Serves 4)

  • 3/4 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3/4 cup skim or 1% milk
  • 1 egg, lightly beaten
  • 4 oz shredded mozzarella cheese( about 1 cup)
  • 4 oz pepperoni, cut into quarters
  • 1/2 lb ground venison, browned
  • 1/2 cup pizza/spaghetti sauce

Instructions

Pre-heat the oven to 375 degrees. Spray mini muffin pans and set aside.

Brown the meat in a large skillet.

In a large bowl, whisk together the flour, garlic powder, Italian seasoning, and baking powder. Then, whisk in the milk and egg. Stir in the mozzarella, cooked venison and pepperoni.

Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

Meanwhile, microwave the pizza sauce. Serve the bites with the pizza sauce for dipping
