I am usually a beer, wine or scotch kind of girl but every now and then I love a fruity cocktail. Especially a pina colada. They are worth every single calorie! My pick for Secret Recipe Club this month was a Pina Colada from Erin’s blog, Making Memories with Your Kids.
Erin is a super sweet single Mom to 2 adorable kids and they look like they have a blast with all the phone crafts, projects and recipes she makes with them. Her Jolly Rancher flavored vodka looks delicious and something I might need to make for entertaining this summer.
Even though I love pina coloada’s I had never made one at home! I have a Vitamix and usually some sort of rum around so I don’t know what was stopping me. While this isn’t something I would make all the time it was especially nice for a little treat to sit by the pool over the weekend. And I literally just sat by the pool, we just opened it but iwt was a not so warm 59 degrees.

Print Prep time 5 mins Total time 5 mins Author: A Fit and Spicy Life Serves: Serves 2 Ingredients - 6 ounces pineapple juice
- 2 ounces coconut cream
- 1½ cups ice
- 3 ounces light rum
- pineapple to garnish (optional)
- Pour pineapple juice, coconut cream and ice into blender. Blend well until ice is crushed well.
- Garnish with a pineapple slice (if desired).
- Pour into a glass and enjoy!
