Secret Recipe Club Crockpot Chicken and Salsa

I think my crockpot feels neglected on it’s shelf in our basement. It doesn’t get used enough even though it is a really great way to get dinner prep done and so you can get on with your day.

My pick for the Secret Recipe Club this month was crockpot chicken and salsa. This was so easy! I had everything on hand, threw it all in the crockpot on Sunday morning and we sat down to a really good dinner. She happened to have my blog last month and I was excited to be paired with BC Mom’s Kitchen. So many good things to choose from! This even made enough to bring some over to my Brother and Sister’s In Laws to enjoy while they are in newborn sleep deprivation stage.

This was hard to get a decent picture of, not the prettiest thing ever but it taste so good.

Crockpot Salsa Chicken

Secret Recipe Club Crockpot Chicken and Salsa

Prep Time: 10 minutes

Cook Time: 6 hours on low

Ingredients (Serves 4)

  • 2 lbs chicken breast
  • 1 can black beans, rinsed and drained
  • 2 cans corn, rinsed and drained
  • 1 cup salsa, think and chunky
  • 1 cup shredded cheddar cheese
  • Salt/Pepper

Instructions

In a crockpot combine beans, corn and 1/2 cup of the salsa.

Lay chicken breasts on top and pour the remaining salsa over.

Cook on low 5-6 hours.

Shred chicken and top with cheddar cheese. Cook for an additional 5-10 minutes until cheese is melted.

Serve with beans and corn, in a tortilla or by itself.
