I love cheese ravioli, something about it so comforting and hearty. But sometimes the sauce can get a little heavy. Enter lime basil dressing and tomatoes inspired by Everyday Food. Dinner was on the table in less than 20 minutes and we both went back for a small 2nd helping. It was even great as lunch the next day for me.
It is a rather pretty dish to look at too!
Ravioli with Tomatoes and Lime Basil Dressing

- 1 bunch basil leaves
- 2 large handfuls spinach
- 1/3 cup olive oil
- Juice of 1/2 line
- 1 lb refrigerated cheese ravioli
- Salt/Pepper
- 1 pint cherry tomatoes, halved
Instructions
Cook ravioli according to package. Drain and set aside.
In a blender puree basil, spinach, olive oil and lime juice until a pesto like sauce forms.
Top cooked ravioli with sauce and halved tomatoes. Season with salt/pepper.
