Pulled Pork Nachos

When you open your fridge and see that teeny tiny container of leftovers and you don’t have a clue what to do with it? That was me coming up with these nachos. We had about a cup of leftover pulled pork (sans sauce) from Scott’s Grandmas funeral and I hated to have it go to waste.

I had a bag of Food Should Taste Good sweet potato chips ready to create a recipe with and I thought… nachos! There is a place I used to frequent for happy hour that has the largest plate of nachos I have ever seen. 4 people can share it and still not finish it. I had it in my mind to come up with nachos using the sweet potato chips and pulled pork.

This comes together in less than 10 minutes and could easily be served as appetizer at a party. I have a feeling it would disappear quickly. The key is to ensure the cheese melts and use a spicy enough salsa to really give it great flavor.

I ended up eating this plate for dinner… it was pretty darn tasty with a nice cold beer after a very emotional day at a funeral. Food tends to have the power to bring people together, in sad times and happy times. It’s one of those uniting things. And this was a dish I know Grandma would have liked and she would have been even happier knowing that all her children, grandchildren and great grandchildren truly celebrated her life. We are going to miss her so much!

Ingredients (Serves 2)

  • 1/2 bag of Food Should Taste Good Sweet Potato Chips
  • Lettuce, cut into bite sized pieces
  • Tomatoes, cut into bite sized pieces or 1/2 can Red Gold Diced Zesty Tomatoes
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup shredded cheddar cheese
  • 1 cup leftover pulled pork
  • 1/2 cup salsa for dipping (or other toppings such as guacamole and sour cream)

Instructions

On a large plate layer the sweet potato chips with lettuce, tomatoes, and black beans.

Add the reheated pork and top with the cheese. Ensuring it melts a bit.

Serve with salsa, guacamole or sour cream.
