The grill is our best friend in the summer, especially on 90+ degree days when you really don’t want to warm up the house anymore. I sing the praises of pork all the time but it is so economically, flavorful and lean. This dish highlights all of those things. Grilled chops basted with a mix of Greek yogurt and BBQ sauce, served with a crunchy slaw.
Inspired by Food Network Magazine with a handful of changes to make it a bit more unique. A perfect summer dish, the kitchen stays clean and cool, while getting great flavors from the grill.
The sauce really does make this dish spectacular. So good and a surprising mix of flavors!
Pork Chops with Broccoli and Corn Slaw

- 1/2 cup plain Greek yogurt
- 1/4 cup Bold, Spicy BBQ Sauce
- 3 tbsp fresh lime juice
- 2 tbsp olive oil
- 4 boneless pork chops
- 3 ears corn, shucked
- 1 bag broccoli slaw mix
- 1 tbsp white wine vinegar
- 1/4 cup chopped cilantro
Instructions
Preheat grill to medium-medium high
In a small bowl whisk together yogurt, bbq sauce, 1 tbsp lime juice, olive oil and salt/pepper. Save 1/4 cup to brush on pork while grilling.
Place 3 ears of corn on the grill, cook 10-15 minutes or until just starting to char. Remove, let cool and cut kernels off each ear. Place in a large bowl.
Season the pork, baste with the sauce and grill 5-6 minutes per side, or until cooked through. Remove and let rest for 5-10 minutes.
In the bowl with the corn add broccoli slaw, vinegar, cilantro, lime juice, olive oil, salt/pepper. Mix together and serve with the pork, and top the pork with the reserved sauce.
