If you looked at my bookshelf you would be surprised by how many cookbooks I have, it’s way too many. I love them! Give me a cookbook, a glass of wine, a comfy blanket and a couch and I will read my way through it and mark all the recipes I want to make. When I meal plan each week I pull out cookbooks, magazine recipes & whatever I am creating that week and plan out a few days of meals. Adding in that I rarely make the same thing twice I need a lot of sources of inspiration! The new Lorna Jane cookbook, Nourish The Fit Woman’s Cookbook, is perfect for finding healthy delicious meals.

 

Lorna Jane is known for her beautiful workout clothes, I would love to order every single item on her website. I received a $50 gift card in addition to the cookbook and had a hard time deciding what to order. I ended up getting the Ella Maxum Fill Zip jacket. It’s perfect for wearing to the gym on chilly mornings (like yesterday morning when it was only in the low 60′s). This jacket is super comfortable and so cute! I knew that I would love it based on how much I was loving the cookbook.

I was invited to participate in a review of the cookbook for Sweatpink Ambassadors and so glad I got this opportunity. I had a hard time picking my favorite recipe to make, there was about 8 that I ended up flagging to make sometime soon.  When I saw the Lemon Thyme Carrot dip I knew it would be perfect for entertaining! We had an impromptu dinner party Saturday night with 6 extra friends and family members over. I made a grilled salmon, a big summer salad, made a cheese board and had fresh vegetables with this dip. I even got Alex and Grace to try it! In my typical adapting fashion I did add in some beans and cilantro to have the dip serve more people and it was nice to have the extra protein kick too.

Lemon Thyme Carrot Dip

Nourish The Fit Woman’s Cookbook: Lemon Thyme Carrot Dip

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients (Serves 6-8)

  • 6 carrots, peeled and cut into large chunks
  • 2 cans cannelini beans, rinsed and drained
  • 1 bunch cilantro
  • 2 cloves garlic
  • 1 tsp thyme
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt/Pepper

Instructions

Cook carrots until soft, about 10 minutes.

In a blender add in thyme, lemon zest, lemon juice, beans, cilantro and garlic. Pulse a few times until smooth. Season with salt and pepper.

Refrigerate for 3-4 hours, serve with veggies or crackers.
