No Bake Energy Bites

If you ever go on Pinterest and search energy bites, there are so many amazing combos out there. Some have oats, nuts, seeds, chocolate etc…

I like these because they are small, they satisfy a sweet tooth if you like to have something sweet after a meal, or just a pick me up if you are hungry before your next meal. These are made in the food processor and you put them in the freezer.

The best part, is you can just eat them straight from the freezer – so they are easy to grab and go. This is my version which my kids thought was great!

Prep Time: 5 minutes

Yield: 11 energy bites

Serving Size: 1 energy bite

Calories per serving: 100

Super easy to make and delicious!

Ingredients

  • 1/2 cup pecans
  • 1/4 cup flour
  • 1/8 cup chia seeds
  • 1/8 cup flax seeds
  • up to 1 tablespoon water
  • 1/2 tsp. sea salt
  • 1 tablespoon chocolate chips
  • 1 tablespoon honey
  • 3 tablespoons peanut butter (I used creamy)
  • *Melted chocolate for drizzle (optional)

Instructions

  1. In a food processor add the pecans and flour and pulse until course. Add the rest of the ingredients, and add enough water so that the dough is easily formed into a ball shape.
  2. Place the energy bites on a plate lined with parchment paper and stick it in the freezer. Freeze for about an hour - once frozen, then place them in a ziploc bag for storage.
  3. Drizzle with chocolate if you want to take these over the top! I used almond bark for candy making, but melted chocolate chips will work too.

My only regret was making 1 batch – because they go fast, so next time I’ll make a double batch and maybe add oats next time too! It’s a great way to stick to your healthy eating plan, and great for me since I am trying to avoid all the girl scout cookies in my house!
