Breakfast
When I feel like I need a bit of a kickstart in the morning I’ll begin my day with a cup of green tea. It gives me the same caffeine kick as normal tea or coffee, but with a good dollop of antioxidants and no calories! Next up it’s my morning smoothie. This time it’s a blueberry smoothie which is made up of unsweetened soya milk, blueberries, a banana, a teaspoon of grated ginger (which is crazy good for you) and some coconut water ice cubes. It looks gray and disgusting until it’s blended, turning it pink and delicious looking! Lunch
For lunch I had Amy’s Kitchen Split Pea Soup* which was so thick and delicious. I got mine from Natures Healthbox where they have a great selection of Amy’s Kitchen soups. I have my eye on the Rustic Italian Vegetable Soup and the Spanish Rice and Red Bean Soup next, mmmm! These soups are gluten free, dairy free and vegan which is great if your diet is even more restrictive than my veggie diet.
Soup just isn’t complete unless you have something to dip in it, and I chose
Roots and Wings Multiseed Brittles with Cheddar Cheese*. I’m obsessed with cheese. If I ever decide to go vegan I’ll really struggle to give it up! DinnerFor dinner I had home made spicy root vegetable and red lentil casserole. I got the recipe from the Good Food website. While it make look like a plate of vomit, I promise you it was delicious!
Lentils are insanely good for you and this recipe is great for using up any veggies you have languishing in your fridge. Here I used parsnips, potatoes, carrots and onion, but I fancy throwing some sweet potato into the mix next time. You add a couple of spoonfuls of curry powder to this to give it a delicious, hot kick. It also freezes really well.
I had a cheeky little Weight Watchers mini garlic baguette with mine, but any bread is great for dipping into this. I recommend a mini peshwari nan bread. Peshwari nan bread *Homer Simpson dribble noise*.
Snack
For a snack I had a Cashew Cookie Nakd bar. The Nakd bars are amazing and Cashew Cookie is a firm favorite of mine. It's so delicious and satisfying. It’s also dairy, wheat and gluten free, and vegan. There are only two ingredients in this bar, dates and cashew nuts! How can something so simple taste so amazing?
