I first found out about chia seeds in 2009 from Cooking Light magazine. I wrote THIS article about some ways you can incorporate it into your diet. Since then of course, it’s become a very popular ingredient to add to your diet. I love going on Pinterest and see how other people use chia seeds.
I’ve seen lots of people make jam from chia seeds. I read a bunch of different methods and different berries you can add. And I am SUPER EXCITED because this turned out great. Growing up, I spent every summer at my grandparents house in a tiny town in Virginia and my grandma had grape vines. Sometimes we were there at the perfect time to pick the grapes and my Mom and her would cook them, strain them and can them – there was nothing better than my grandma’s grape jelly.
BUT, I’ve never canned in my life – I have no idea how to do it, so this recipe takes about 10 minutes to make and it comes out like jam – how cool is that? Chia seeds can absorb 10x their size, so when added to a liquid, it creates a gel around the seed which is how it works to make the right consistency.
Print Mixed Berry Chia Seed JamIngredients
- 3 cups mixed berries (I used frozen)
- 1 -2 tablespoons honey
- 2.5 tablespoons chia seeds
Instructions
- In a small saucepan, add the berries and cook on very low heat for about 5 minutes. Using a potato masher or fork, break up the berries to whatever consistency you want (you could also put this into a blender and get a very smooth sauce).
- Add the honey and chia seeds, and cook for another 3-4 minutes - it will start to thicken
- Let cool for about 15 minutes in the sauce pan and transfer to a jar
- You can use this for about a week
- If the sauce is still thin, add more chia seeds, a teaspoon at a time to get the consistency you want
- Refrigerate until ready to use
So good!!!!
You can use this jam on toast – but what I am going to do is make overnight oats with the name from BLISSFUL BASIL
