The retro tuna salad with pasta, peas and mayo is really not my thing. Just thinking about that makes me shudder. But this Italian inspired version is pretty darn delicious. Great flavors, fresh tuna, and tons of veggies. This is my kind of salad.



This is the perfect Summer salad. It is light, has a ton of protein and you don’t have to worry about it spoiling quickly because there is no mayo in it. Perfect for your next potluck.
Tuna and Cannelini Bean Salad

- 2 15 1/2 ounce cans, cannelini beans rinsed and drained
- 1 15 1/2 ounce can diced tomatoes, drained
- 1/2 red onion, finely chopped
- 1 bunch cilantro, finely chopped
- 1/2 bunch mint, finely chopped
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 5 ounce cans chunk-light tuna, drained
- Salt/Pepper
Instructions
In a large bowl combine beans, tomatoes, onion, cilantro, mint, tuna, lemon juice and zest.
Drizzle olive oil over salad and top with salt/pepper. Serve immediately or chill for 2-3 hours.
