Meatless Monday Tortellini with Brussels Sprouts and Lemon

While I am not a vegetarian, I don’t eat meat everyday. A lot of our dinner feature something other than meat and I like the balance of a little more vegetables in my life. A pasta packed with flavor from lemon, onions and brussels sprouts. Delicious brussels sprouts.

 

I really believe that people who say the don’t like brussels sprouts haven’t really had them prepared well. Roasted or sautéed they are incredible. Especially in this pasta inspired by Everyday Food

 

This is a great Monday night meal, you only have to dirty a few dishes, the grocery list is short and it is really delicious.

Meatless Monday Tortellini with Brussels Sprouts and Lemon

Cook Time: 15 Minutes

Ingredients (Serves 4)

  • 1 pound Brussels sprouts, trimmed and quartered
  • 3 tbsp butter
  • 1 medium onion, finely diced
  • 1 pound fresh cheese tortellini (from the refrigerated pasta section)
  • Zest and juice from 1 lemon

Instructions

Bring a large pot of water to boil. Add salt.

In a cast iron skillet melt better, add onion and cook about 8 minutes.

Cook brussels sprouts 3-4 minutes. Using a large spoon transfer spouts to skillet (I have a Pampered Chef one that is fantastic for this)

Add fresh tortellini and cook 3-4 minutes or until they float to the top.

Add the tortellini to the skillet. Stir to combine.

Top with lemon juice, zest and a few spoonfuls of pasta water.

Serve immediately.
