Meatless Monday Spicy Pasta Salad

Making a big bowl of pasta salad to provide lunches for Scott and I during the week is the best way to make sure we are eating healthy, not having to go out for lunch everyday and tastes so much better than some frozen meal.

 

I wanted a pasta salad with lot of flavor, enter one inspired by Food Network Magazine and I promise it’s got a kick. Chipotle Peppers in Adobo really add a ton of flavor. Some of the sauce in the dressing and 2 chopped up peppers. You feel that heat slowly creep in the back of your throat. Not too much heat but just enough.

Ingredients (Serves 6-8)

  • 12 ounces whole wheat penne pasta
  • 1/2 cup mayonnaise
  • 1/4 cup whole milk
  • 1/4 cup white vinegar, plus more if needed
  • Salt/Pepper
  • 1 1/2 teaspoons adobo sauce from a can of chipotles plus 1 minced chipotle
  • 1 pint grape tomatoes, halved lengthwise
  • 1/2 munster cheese, cut into small cubes
  • Handful of chopped cilantro

Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and rinse under cold water until no longer hot; set aside.

Make the dressing: Mix the mayonnaise, milk, vinegar, 1/2 teaspoon salt, pepper to taste and the adobo sauce in a small bowl.

In a large bowl, combine the pasta, dressing, tomatoes chopped peppers and munster. Top with cilantro and chill for 2-3 hours.
