After an indulgent few weeks full of entertaining, family in town, and the holidays I was ready for a meal with no meat! I saw this idea on Pinterest and knew I could recreate it with my own spin.
This is one of those meals that comes together quickly. Buy a roll of pre-cooked polenta and choose your toppings. A quick broil on each side, cooking down some mushroom and peppers and then a little spread of goat cheese and we had these great mini pizzas. Easily enough to feed 4 as a main course or to put out for appetizers. These are so delicious!


Mini Polenta Pizzas

Prep Time: 10 minutes
Cook Time: 15 minutes

6058453Ingredients (Serves 10-12)
- 4 ounces goat cheese
- 1 tbsp Greek Seasoning Mix (or any herb seasoning blend will do)
- 1 tbsp olive oil
- 1 red bell pepper, chopped into bite sized pieces
- 8 ounces of mushrooms
- 1 24 oz roll of ready to eat polenta
Instructions
Preheat broiler.
Combine goat cheese and Greek seasoning in a small bowl.
Cut polenta in 24 slices and place on 2 cookie sheets, sprayed with cooking spray or lined with baking mats.
Broil for 5-7 minutes per side.
While polenta is cooking, heat the olive oil and cook the peppers and mushrooms 8-10 minutes. Keep warm.
Spread the goat cheese mixture on each polenta slice, top with peppers and mushrooms and serve.
