A perfect excuse to break out the Panini press/grill/griddle I got for an amazing deal on Gilt. More than 50% plus a bonus code. Love deals like that! We have been using to make eggs, chicken but this Panini takes the prize for best thing made so far.
The secret to a good panini is crusty bread, a good sear, and a list minute press down. Crunchy gooey cheesy goodness. Add in fresh summer tomatoes and basil and now we are really in business.
Add in a rose, dining al fresco and you may just have the perfect summer meal. It makes me sad that the best summer I have ever had is winding down… But that just means so many fantastic things to come!
Margherita Panini

- 1 french loaf
- 2 tomatoes, sliced in 8 slices
- 1 cup shredded mozzarella
- Handful fresh basil leaves
- Salt/Pepper
- Olive Oil
Instructions
Cut french loaf into 2 sandwiches.
Slice bread open, but not all the way through.
Brush olive oil lightly on the insides of the bread, top with tomatoes, salt/pepper, mozzarella, basil.
Place on a panini press or grill pan and cooked until the bread is crusty and the cheese is melted through.
