Happy New Year everyone! I think like a lot of people who may have indulged over the holiday are getting back on track – and I am certainly one of those people.
I didn’t do horrible eating wise over the Holidays, I avoided to treat table at work with all the food gifts of cookies, candy, donuts, towers of treats, cheese and cracker baskets – so that was a HUGE accomplishment. But I am ready to make this my year to get to my goal weight – who’s with me?
To get motivated I’ve been watching You Tube videos of people who have lost weight or who generally eat healthy all the time. I came across this girl Kristina who eats an 80/10/10 diet. 80% fruits and veggies, 10% fat and 10% protein. While I don’t think I could do that 100% – it has inspired me to eat more fruits and veggies this week. In fact for breakfast, lunch and dinner – I had at least 2-3 servings of fruits and veggies and you know what – that’s a lot of food you get to eat and I was never hungry! I think she also inspires me because she looks so healthy.

Then later in the week, I started watching a show on Hulu (for free) called Eat Yourself Thin. It basically is a show hosted by 3 women, who help someone revamp their favorite fatty meals and the goal is to lose a dress size in 6 weeks. It actually has a bunch of good recipe ideas. One of the recipes was for banana chocolate chip muffins. I’ve made several versions on my site, but their recipe sounded good, so I decided to try it – although I did make some adjustments when I made the batter it was super thin, so I added more whole wheat flour. And I ended up chopping up 1 pecan on half of them for a little crunch factor. And the original recipe said it made 12 muffins and I made 18!! So score on lower calories!

A great idea for a quick weekday breakfast!
Ingredients
- 2 cups whole wheat flour
- 1 cup flour
- 1/2 cup oats
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 bananas, mashed
- 1/2 cup brown sugar
- 2 tablespoons canola oil
- 2 large eggs
- 1 1/4 cup reduced fat buttermilk (I used skim milk with 1 tsp. vinegar)
- 1 tsp. vanilla extract
- 2 tablespoons chocolate chips
Instructions
- In a mixer add the flours, oats, cinnamon, baking powder, baking soda, salt and mashed banana and mix on low speed for 2 minutes.
- Add the brown sugar, canola oil, eggs and buttermilk (or skim milk) and blend for another 2 minutes.
- Add the vanilla and mix for another minute.
- Place into a muffin tin lined with cupcake liners, or spray with Pam Cooking spray so it doesn't stick.
- Bake at 400 degrees for 13-15 minutes or until a toothpick comes out clean.
