When I think about summer bbq’s there is usually cole slaw as a side. And I am not a fan of heavy, thick, mayo laden cole slaw. I want light, crisp & refreshing. This cole slaw is it. Kale, cabbage & carrots, crunch for the sunflower seeds. It happens to be really easy to make and vegan.
We paired this with some grilled brats (so not vegan, but it is all about balance) and some fruit salad. The perfect summer meal! I love not having to turn the oven on
Kale Cole Slaw

- 1/3 cup olive oil
