The smell of beef stew wafting through the house on a snowy day, it’s been cooking for 8 hours and is rich and flavorful. Chunks of browned chuck roast, celery, onions, potatoes and carrots and that slight taste of something unique. I am not normally a big Guinness drinker but put in a stew and I will love it!
This makes a ton so you can freeze it or eat it all week like Scott and I did
Guinness Beef Stew

- 2 tbsp butter
- 2 lbs beef chuck roast, cut into 2 inch pieces
- Salt/Pepper
- 1 large onion, diced
- 2 celery stalks, diced
- 2 tbsp tomato paste
- 1 pint Guinness
- 3 cups beef broth
- 4 carrots, peeled and cut into pieces
- 3-4 potatoes, cut into pieces
- 2 tsp thyme
Instructions
Heat the butter in a large skillet and brown beef in batches, adding each batch to the slow cooker.
Add the onions and celery and cook until soft, about 5 minutes. Add to the slow cooker.
Pour in the broth and Guinness, add the tomato paste, carrots, potatoes, thyme and salt/pepper.
Cover and cook on low for 8 hours.
