Grilled Chicken with Spinach and Melted Mozzarella!
I am a firm believer in grilled chicken. It's terribly easy to make, and it doesn't have to be boring. What more could you ask for?

I grew up a picky eater. I made up words such as 'Mogeeko' to describe food that I thought was gross when I was a mere 5 years old. Me, Katherine, the picky eater of the century, was the one who found, cooked, and ATE this grilled chicken with spinach, cheese, and peppers on top.

Grilled Chicken BruschettaAdapted from SkinnyTaste

Ingredients:
  • 21 oz (3 large) chicken breasts sliced in half lengthwise to make 6 cutlets
  • salt and pepper to taste
  • 1 tsp olive oil
  • 3 cloves garlic, crushed
  • 10 oz frozen spinach, drained
  • 3 oz shredded part skim mozzarella
  • 1/2 cup roasted red pepper, sliced in strips (I used a canned kind)
  • olive oil spray

 Directions:
Preheat oven to 400°. Season the chicken with salt and pepper. Spray a grill with olive oil spray. I use an indoor grill. It's a George Foreman. Feel free to grill outdoors if it's hot where you are! Cook the chicken on the grill. Don't overcook or it will be too dry!


Heat a sauté pan on medium heat. Add oil and garlic, sauté a few seconds, add spinach, salt and pepper. (If you use frozen spinach like I did, make sure you squeeze the moisture out of the spinach first.) Cook a few minutes until heated through.

When the chicken is done, lay on a sprayed baking sheet or in a glass baking dish Divide spinach evenly between the 6 (or more!) pieces and place on top. Top each with half oz (or more!) mozzarella, then with slices of roasted pepper (we love a lot of this!) and bake until melted, about 6-8 minutes.
