The first meal my new kitchen, it felt so good to be cooking again! Everything was put away where it needed to be and I needed the time in the kitchen to de-stress. It had been a long few days of moving, cleaning, putting things together and I was beyond exhausted. But I knew I needed to make something healthy and not eat pizza or subs again.
Flavorful grilled chicken, simple and easy! We paired it with brussels sprouts and our bodies were so happy to be eating healthy.
Garlic Marinated Chicken

Ingredients (Serves 4)
- 1 lb chicken cutlets or chicken breasts
- 1/4 cup white wine vinegar
- 1/2 cup olive oil or garlic olive oil
- 1 clove garlic finely minced
- 1 tbsp dijon mustard
- 1/2 tsp sugar
- Salt/Pepper
Instructions
Place chicken in baking dish season with salt/pepper.
In a small bowl whisk together white wine vinegar, olive oil, mustard, sugar and garlic. Pour over chicken and let sit for at least 10 minutes or up to an hour.
Grill chicken a few minutes on each side, or until cooked through.
