Freekeh Taco Bowl

Anytime I hear about Freekeh, a dance song begins to play in my mind. I have no clue why but it makes me want to bust a move. Besides wanting to dance freekeh is a pretty delicious grain. It’s hand roasted green wheat and has 6 grams of protein per serving. With similar nutritional stats to quinoa this is an up and coming grain. At least in my mind it is. Because I am that foodie that gets excited about grains…

You can use it in salads, as a breakfast food, in stews or in delicious taco bowls like I did. While I love tacos what I really care about is all the fillings. This bowl is loaded with flavor, a layer of ground venison, freekeh, lettuce, diced tomatoes, cheese and salsa. The topping combinations are endless but this just happened to be what we had in our just got back from vacation and we have no food fridge. The key to this is to make sure you really flavor the ground meat, I used a hot and spicy taco seasoning and added in Stubb’s Beef Rub as well. If we would have had more veggies I would have loaded this bowl up even more. A big benefit to make your own taco bowls, lunch the next day. Just use whatever you don’t finish add in a bit more meat and freekeh and load it up.

Ingredients (Serves 4)

  • 1lb ground beef or venison
  • 1 packet taco seasoning
  • 1 tbsp Stubb’s Beef Rub
  • 1 package Freekeh, cooked

For the Taco Bowl

  • Lettuce
  • Diced Tomatoes
  • Cheese
  • Food Should Taste Good Tortilla Chips
  • Salsa

Instructions

Cook freekeh according to package instructions, usually 20-25 minutes.

Brown beef or venison and add in taco seasoning and Stubb’s Beef rub.

Build taco bowls with browned meat, freekeh, lettuce, diced tomatoes, cheese, crumbled tortilla chips and salsa.
