Food Should Taste Good Girls Night and Cheesy Corn Dip

Yesterday I mentioned our girls night in my Kale and Brussels Sprouts Salad and Food Should Taste Good was generous enough to send delicious chips, goody bags, and recipe ideas for our evening. Besides having just chips and salsa I wanted a warm dip to dig into. Cheesy, creamy and corn dip to be precise. Perfect on a chilly fall evening with dear friends, delicious food, glasses of wine and a roaring fire.

Let’s talk about this corn dip. If you are looking for an EASY recipe to make to bring to a party, this is it. Only a few ingredients and all you have to do is mix it all in a baking dish and go. When this comes out of the oven steaming with melted cheese just try not to eat about half of it. No really. I had to stop myself from eating it all!

Food Should Taste Good Girls Night and Cheesy Corn Dip

Prep Time: 5 minutes

Cook Time: 20 minutes

Serves 6-8

An easy cheesy, warm chip dip.

Ingredients

  • 4 cans sweet corn, drained and rinsed
  • 1/2 cup mayo
  • 1/2 cup shredded cheddar cheese
  • Salt/Pepper
  • Sliced jalapenos

Instructions

  1. Preheat oven to 350.
  2. In a large baking dish combine corn, mayo, cheese, salt/pepper. Stir until incorporated.
  3. Place jalapenos on top and bake for 15-20 minutes.
