Firecracker Chicken

My son Paul and I made this last weekend for lunch – and it was so good!!!! It reminds me of Panda Express orange chicken glaze – spicy and sweet!

I found this recipe on Pinterest. I pretty make chicken a few times a week and I keep looking for different ways to make it so my family doesn’t get tired of the same old thing. My son Paul LOVES hot and spicy food – like he puts sriracha on pretty much everything!

Ingredients

  • For the sauce:
  • 1/3 cup hot sauce (I used Frank's)
  • 1 cup packed light brown sugar
  • 1 tablespoon water
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon salt
  • Chicken breasts, cut into chunks
  • (peppers and onions optional)
  • Cooked rice

Instructions

  1. In a medium saucepan, add the hot sauce, light brown sugar, 1 tablespoon water, 2 tsp. apple cider vinegar and 1/2 tsp. salt.
  2. Bring mixture to a boil, then reduce heat and simmer for about 10 minutes - the sauce will start to thicken.
  3. In a small skillet, we added some of the cut up chicken (enough for 2 people) and started to brown it on all sides. We also added some cut up green peppers and onions. Ladle about 1/2 cup of the sauce over the chicken, place a lid on it and and simmer for about 10 minutes or until the chicken is cooked through.
  4. We had leftover rice, so in a bowl we placed the warmed up rice in the bottom of the bowl, spooned the chicken mixture over the top - add more sauce if you like and top with green onions.

My next thing I want to try is Korean BBQ Chicken. I was watching Unique Eats on The Cooking Channel and they had a show all about chicken. They went to a place called CRISP – which turns out is in Chicago and about 8 miles from my house! Definitely going to try that place soon! They have chicken, something called Buddha Bowls, Wraps, etc.. Check out their menu HERE
