Like a bunch of people in the country – it’s been SUPER hot in the Chicagoland area. I’ve been unimaginative in the kitchen, trying to make things that don’t involve turning on the stove – eating on paper plates – to make life a little easier.
Over the weekend I got stuff to make my awesome beef stew in the crock pot. 10 minutes of prep before leaving for work, and I will walk into a great meal waiting for me and my family!

- 1 pound beef stew meat
- 7-8 small new potatoes, cut into chunks
- 5 large carrots, sliced
- 1/4 small white onion, diced
- 2 cloves of garlic, minced
- 4 celery stalks, sliced
- salt and pepper to taste
- 1 tsp. crushed red peppers
- 2 tsp. oregano (dried)
- 1 large bottle (46 oz.) V-8 Juice
- 1 tablespoon worchesterchire sauce
Instructions
- If the beef stew meat you buy is in big pieces, but them into bite size pieces and throw them at the bottom of the crock pot.
- Chop the rest of the ingredients and place them into the crock pot.
- Add the spices and worchestershire sauce.
- Pour the bottle of V8 juice over the top and put the lid on. Cook for 8 hours on low, or 4-5 hours on high.

I mentioned last week, that I am focusing more on continuing my weight loss journey. I’ve still managed to keep of 25 pounds off but I would like to lose another 30-40 pounds. I keep thinking of people like Janette – who I just interviewed, who started out at over 400 pounds the courage and determination that she had to make it to her goal – then certainly I can do it too! I think sometimes everyone has their obstacles in life they have to hurdle over to get to where they want to be. And most of us should be thankful if we are healthy, have access to healthy food, supportive friends and family, nothing should stand in our way.

One way I am going to get to my goal weight, is to make my food the night before (breakfast and lunch and fruits or veggies as snacks) so I can just grab it on my way out the door – then I won’t be tempted to get food by my office which I may not make the healthiest choice!

I had 3 baby new potatoes with bbq sauce and a sprinkle of cheese, leftover chicken and an apple! - So good and filling!
