A quick recipe from my friend Jen before I sign off for the week. We are doing a very low key Christmas this year, I didn’t even decorate this year. Between sinus problems and a few other things going on I just didn’t have it in me. But the bonus of all of that, time to relax. Sleeping in, watching movies, cuddling up by the fire. That’s the perfect way to spend the Holidays!
- 1-(12 oz) pkg fresh cranberries
- 2-finely diced large stalks of celery
- 1-finely diced small red onion
- 1-jalapeno pepper–seeded and minced
- ¼ cup chopped fresh cilantro
- ½ teaspoon kosher or sea salt
- ¾ cup sugar
- 3-tablespoons fresh lime juice
- Zest from 1 lime
- Process cranberries in food processor (or chop in a food chopper) until coarsely chopped.
- Transfer to bowl, add remaining ingredients. Stir to combine.
- Try to make this at least 24 hours before you want to serve it. Stir several times during the 24 hours to mix ingredients together so the sugar gets dissolved
We are going to a dinner on Christmas eve and over by the neighbors Christmas day for a bit and I never show up empty handed, this delicious cranberry salsa is always a hit. My friend Jen used to blog and she had this amazing salsa recipe up. I make this at least 3-4 times in November & December! Family now requests this dish, it’s so addicting.
If you want to make this a bit spicier leave in the jalapeno seeds or even add a 2nd one. I tend to make a mild batch and a spicy batch to make everyone happy.
