Couscous, Cherry and Chickpea Lettuce Wraps

Spring. It’s a taboo thing to say in March but we hit 45 degrees today. Bright sunny 45 degrees. It was wonderful! We still have a bit of snow on the ground, but with temperatures supposed to hit the mid 50’s that will all be gone this week. You may see me dancing in the streets. Since this winter was basically cold and almost zero snow I have a big case of cabin fever. Normally I make the best of it, skiing, snowshoeing and just being outside. It’s hard to do those activities when you don’t have any snow.

 

To go along with that cabin fever I have been craving fresh, clean and light ingredients. These couscous lettuce wraps are perfect for that. Light fluffy grains with a hint of sweetness from dried cherries and a nice protein and fiber kick from the chickpeas. To make this even easier make a double batch of the filling and have it ready to go for a quick lunch or dinner.

 

This made a great lunch, a container of the filling with a few lettuce leaves on top and I had a healthy lunch. Even the filing alone was delicious!

  • ¾ cup plus 2 tbsp orange juice
  • ⅔ cup couscous
  • Salt/Pepper
  • 1 15 ounce can chickpeas, rinsed and drained
  • ½ cup flat leaf parsley, chopped
  • ⅓ cup dried cherries
  • Romaine hearts or Boston lettuce leaves
Instructions
  1. Bring orange juice and couscous to a boil. Cook for 5 minutes. Remove from heat and fluff with a fork.
  2. In a bowl mix chickpeas, cherries, parsley and salt/pepper. Stir in couscous.
  3. Spoon into romaine hearts or lettuce leaves and eat.
