When I made my spicy Sriracha chicken the other night for dinner, it called for cilantro to put on top as a garnish. Anyone who has bought fresh cilantro knows it comes in a HUGE bunch. What was I going to do with all that leftover cilantro?
I went to pinterest and just searched for cilantro. Many possibilities popped up, but a common theme was cilantro lime salad dressing. I thought that sounded amazing and after reading about a dozen variations, I came up with my own version. One problem, it wasn’t really the consistency of salad dressing and I didn’t want to just keep adding olive oil to make it thinner, so mine ended up being kind of thick – so I’m calling it a spread vs. a salad dressing.
I had leftover fajitas for lunch and put some of this spread on there. You can use it as a dip for vegetables or chips. You could put it on top of a burger, your favorite sandwich – so many choices!
I can’t tell you how much I love this. I definitely will make this often. We have Mexican food a lot. In fact tonight I made chicken tortilla soup and put a dollop on top. Amazing!!
Print Cilantro Lime Avocado SpreadIngredients
- 1 cup fresh cilantro leaves (remove the stems)
- 1/4 cup olive oil
- 2 cloves garlic
- 1 tablespoon shallot
- 1 tsp. pepper
- 1/2 jalapeno (seeds optional)
- juice from 2 limes
- pinch of salt
- 1/2 avocado
Instructions
- Place all ingredients into a small food processor or blender and blend until smooth - that's it!
