Chocolate Peppermint Bars

My local grocery store had all three and I have recipes planned for the pie crust and pizza dough but since the theme of the day was baking I wanted to start with the gluten free cookie dough. This worked so well for these bars! I scooped the container out into my baking dish and pressed it down for the first layer.

These bars are a combination of those chocolate and mint candies with chocolate chip cookies on the bottom. So darn good. These did not last long! I brought some into work, and we ate a bunch too.
